SPICY TOMATO CHICKEN

 

 

INGREDIENTS

 

3 Chicken thigh fillets

2 small Onions

3 Red Chillies

2 cloves Garlic

1 tsp Ginger minced

1/4 tsp Turmeric

1/2 tsp Lime juice

Salt to taste

1 tsp Sugar

Kentucky flour (to coat chicken)

1/2 tsp Chilli powder

15 Cherry tomatoes sliced in half

1 tbsp Tomato sauce

1/2 tsp Chicken stock powder

1/2 cup Water

Cooking oil for deep frying

METHOD

 

Sprinkle some salt on the chicken

 

 

Sprinkle Kentucky flour on the chicken and coat well. Set aside until needed

 

 

Combine onions, chillies garlic and ginger in a blender and blend well

 

 

Put enough cooking oil in a wok to deep fry the chicken pieces

 

 

Fry the chicken until it is golden brown

 

 

Remove the chicken from the oil and set aside

 

 

Remove all but about 2 tbsp of oil from the wok and then add the minced ingredients

 

 

Add a shake of salt

 

 

Add sugar

 

 

Add turmeric

 

 

Add the tomatoes

 

 

Add the tomato sauce

 

 

Use the water to rinse out any ingredients still in the processor and add to the wok

 

 

Add the lime juice

 

 

Add the chicken stock powder. Cook until the tomatoes soften.

 

 

Return the chicken to the pan

 

 

Add the chilli powder and mix well

 

 

Serve on boiled rice with your choice of vegetable dish.
